Healing Sangkap: Black Rice Pinoy Paella

Ingredients:
- 2tbsp Oil
- 1/4cup Longanisa local, diced
- 1/4cup Chicken breast fillet, diced
- 1tbsp Onions, chopped
- 1/2tbsp Garlic, minced
- 2tbsps Tomatoes, diced
- 2tbsps Red and green bell pepper, diced
- 2-3cups Cooked black rice
- Seaweed salt and ground black pepper to taste
- Calamansi whole garnish
- Lemon wedges garnish (optional)
- Mayonnaise (optional)
- Parsley, chopped as garnish
Saute and render longanisa in a pan with hot oil. Add chicken and season with salt and pepper. Remove and set aside. Using the same pan, saute onions, garlic, tomatoes and bell peppers. Add cooked black rice and season with seaweed salt and pepper. Add cooked longanisa and chicken with the black rice mixture, mix very well. Serve with calamansi or lemon wedges and garlic mayonnaise.
