Ingredients:
- 3tbsps oil
- 2tbsps white onions, minced
- 1tbsp garlic, minced
- 1can tuna, drained
- 1/2cup shiitake mushroom, rehydrated and chopped
- 1tbsp oyster sauce
- 1/2tbsp hoisin sauce
- Water or broth from the mushroom and tuna, as needed
- 2cups black rice, soaked in water
- Water as needed (4-5cups)
- Black pepper to taste
- Lumpia wrapper as needed
- Alugbati leaves, fresh, as needed
- Oil for frying as needed
- 1/2cup Cane vinegar
- 1/4cup Fish sauce
- Brown sugar as needed
Heat oil in a pan. Sauté onions and garlic. Add tuna and mushrooms. Add oyster suace, hoisin sauce and black pepper. Add water or broth if needed. Remove 3/4 of the mixture and set it aside. Add black rice, stir and pour water. Bring to a boil, simmer and wait until rice is cooked. Once the rice is cooked, transfer to a plate and let it cool. Once the rice mixture is cooked, get a lumpia wrapper, place alugbati leaves, add cooked rice in the middle and top it with the tuna mushroom mixture, roll and deep fry in hot oil until golden. Place fried black rice wrapped tuna and mushroom in paper towel to drain excess oil. Combine vinegar, patis and brown sugar to make the dipping sauce and serve together with the deep fried black rice.
